11:00am Passport to Flavour w/ Chef Anya Keefe, Chocolatier and Owner of Appetite for Success
Starting with the story of chocolate and a crash course in the basics of flavour and taste perception, Chef and Chocolatier Anya Keefe will guide you through a horizontal tasting of chocolate from the major chocolate growing regions, including the Caribbean, South America, Southeast Asia and the east Coast of Africa. You’ll receive a “passport” that describes the chocolate being sampled, its origin story, as well as information on where it can be sourced. A fun and tasty way to develop your palate, explore some of the factors that influence chocolate’s flavour and engage your five senses to discern subtle differences in chocolate from around the world.

The Ultimate Salmon Burger
Bob will use BC fresh, wild salmon to create these burgers. Combined with aioli, creamy guacamole and a zesty lemon, this is sure to become one of your favourite summer meals.
Mexican Street Corn
Grilled to perfection, this sweet local corn will be topped with a mix of easy-to-find Mexican crema and cheeses and include a kick from the chilis sprinkled on top. A perfect compliment to the Ultimate Salmon Burger.

Wild Mushroom Ravioli
Ravioli made without pasta?! That’s right, Bob’s wild mushroom ravioli is made with wonton wrappers. No Italian heritage required!
The Ultimate Kale Caesar
No need to drive across town to order your favourite caesar salad. A recipe that still remains in demand from Bob’s first book 25 years ago will be available for you to quickly learn and prepare at home.
Learn how to turn a simple head of cauliflower into a lip-smacking candy bomb of a treat that kids won’t be able to get enough of!
Along with his cooking demonstrations, Bob will be having a bit of fun with the following two interactive presentations:
Man vs. Can: Bob Blumer: not only a chef but a stuntman! During this stunt, Bob will attempt to make pan-seared sockeye salmon on a fresh corn succotash in less time than it takes for you to heat up a can of spaghetti-O’s!
Glutton for Punishment Triathlon: A few lucky audience members will get ready to compete in a relay-style competition based on the skills Bob learned while breaking 7 Guinness World Records!

Gastronaut, artist, television series producer, and seven time Guinness World Record holder Bob Blumer will be participating in this year's Fork & Finger.
Bob Blumer is the creator and host of the television series Surreal Gourmet, and Glutton for Punishment, and a producer and host of World’s Weirdest Restaurants. His shows air on various networks in over twenty countries world-wide. Bob has written five acclaimed cookbooks and is the co-author of the best-selling Pizza on the Grill, (just released in its second edition). His most recent book Glutton for Pleasure: signature recipes, epic stories and surreal etiquette was summed up by Publisher’s Weekly as "Equal parts memoir, lavish art book, multi-genre soundtrack and culinary tour de force." Anya is a formally trained chef and chocolatier who also works in public health policy and research. For the past 10 years, she has created unique tasting experiences to reveal her ‘dark’ side and to share her love of fine chocolate. Her curiosity about the parallels between what it takes to build a great team and what it takes to create an exceptional dish led her to start Appetite for Success, a venture designed to explore concepts of team effectiveness in the context of cooking and chocolate. In addition, she produces a line of small batch truffles under the name of Karmei Chocolates. Flavours are seasonally inspired, often playful and change monthly. Karmei is an anagram of "meraki", a Greek word that means to do something with soul, creativity, or love. It is the essence of yourself that you put into your work.
Big Dog BBQ Pitmaster Kevin Legge & Sous Chef Colleen Hayes
As the Pitmaster for the competition BBQ Team BIG DOG BBQ, Kevin Legge is the real deal when it comes to his passion for amazing BBQ. Both an award winning GrillMaster and PitMaster His awards include 1st Place Burger, BC Burger Championships (2018) and 2nd Place Steak, Canadian Steak Championship (2018), 2nd Place Overall, World Food Championship Top Ten Steak (2017) including 1st place in the Structured Dish category, SCA TEXAS Steak Championship Texas 2017, Dutch Steak SCA Championship 1st place 2017. More recently Kevin was 2nd for Chicken Wings at BREW N Q 2018 in the UK and Placed 1st at the SCA Seattle GrillFest 2018 Washington States 1st SCA sanctioned event and The BIG DOG TEAM took 5th Place at the BIG BARN BURNER BBQ in Yarrow against some tough competition and managing to get awards in all categories including 2nd place chicken and 3rd place Ribs. Kevin also cooks on other teams and has been to the Jack Daniel’s World Championships in Tennessee 3 times and each time his team has won some awards.
Kevin has already qualified for the following World Championship; 2018 California Cooking Competition, 2018 SCA Texas Steak World Championships and the 2018 World Food Championships in Orange Beach Alabama.
Kevin travels the world with his passion and incredible BBQ skills, sharing his love for people, food and good BBQ.
Colleen Hayes is an award winning member of the BIG DOG TEAM participating as Sous Chef at the World Food Championships and support for all BBQ events. Colleen keeps the DOG on a leash. When taking the roll of Head Cook, Colleen is the creator of BC Championship Butter Tarts and Pies. Colleen is instrumental in presentation, side categories and desserts.
