11:00am Passport to Flavour w/ Chef Anya Keef, Chocolatier and Owner of Appetite for Success
This year we start the day with a unique chance for audience members to taste a variety of different chocolates (within the 60% – 75% cocoa band), from around the world. Chocolatier Anya Keef will talk about the flavour profiles and demonstrate how local grown conditions affect flavour. Participants will also have an opportunity to taste cacao nibs and cocoa butter and see how chocolate that does not contain cocoa butter compares when manufacturers substitute other fats for cocoa butter.
